Sampling is done in such cases, by counting the number of plants per a small unit area like 10m X 10m (or 10 yards by 10 yards if you prefer), and counting a few such plots etc. If the sampling is done properly, the results will be good. It becomes a problem in statistical sampling.

What is the average yield per plant? Using that calculate from the yield per plant how many plants it takes to produce a bushel on average and then figure how many plants per acre you have planted. That should give you the bushel per acre.
