Sweet Cake

Vanilla FLAVOR

3 C. Cake Flour, sifted
2 t. Baking Soda
1 t. Baking Powder
1 t. Cornstarch or Potato Starch
1⁄4 t. Cinnamon
1⁄4 t. Powdered Ginger
1⁄4 t. Nutmeg
Pinch Salt
2 C. Sugar
2 C. Vegan Milk, vanilla flavored
1 T. White Vinegar, Cider Vinegar or Lemon Juice
3⁄4 C. Cooking Oil or Melted Shortening
1 T. Vanilla

Option: for a pink cake, replace some of the vegan milk with some red fruit or berry juice

1. Preheat oven to 350°. Lightly grease and flour two 8” cake pans (use heart-shaped if possible).

2. Sift together the dry ingredients in a large mixing bowl.

3. Mix together the wet ingredients in another bowl and add this to the dry, gradually stirring it in. Make a fairly smooth batter.

4. Pour into cake pans and bake for 45 minutes (or until ye olde toothpick comes out clean).

5. Cool on wire racks for 10 minutes or so and then carefully turn out. Cool a bit longer and frost when appropriate.

Basic Pink Frosting
1⁄4 C. Sweet Vegan Cream
1 t. Vanilla
1⁄4 C. Softened Margarine
1 or 2 T. of Red Berry or Fruit Juice
Pinch of Powdered Ginger
Several Cups of Powdered Sugar

I'm from Texas & this is the recipe that I always use...I make this make about every month & I've been making it for about 30 years now...ENJOY...It's one of my all-time favorite cakes!

**IT'S THE BUTTERMILK & CINNAMON THAT MAKES THIS CAKE SOOOOO GOOD!!!!!!

Texas Sheet Cake

2 cups sugar
2 cups all-purpose flour
1/4 cup cocoa
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup butter (1 stick), melted
1/2 cup buttermilk
1/2 cup canola or other vegetable oil
1 cup water
2 eggs, lightly beaten
1 teaspoon vanilla extract

Preheat oven to 400°F. Grease and flour a 13x9x2-inch baking pan.
Sift together the sugar, flour, cocoa, baking soda and cinnamon, and set aside. Stir together the remaining ingredients. (Since I'm a chocolate freak, I use just a half-teaspoon of cinnamon. I want the cinnamon flavor to come through, but only just a hint of it. Strictly a matter of personal preference.) Mix the wet ingredients with the dry ingredients, stirring until you have a smooth, rather thin batter.

Pour into your prepared pan, and bake at 400°F for 20-25 minutes, or until a toothpick comes out clean.

While the cake is baking, prepare the frosting.

1/4 cup plus 2 tablespoons milk (whole, 2% or skim - doesn't matter)
1/4 cup cocoa
1/2 cup butter
1 pound confectioners sugar, sifted (about 4 cups)
1 teaspoon vanilla extract
1 cup chopped pecans
Mix the milk and cocoa in a heavy saucepan (stir, stir, stir). Add the butter and, over medium heat, stir until the butter melts. Remove from heat and gradually stir in the sugar and vanilla until smooth. Add the pecans.
When the cake is just out of the oven, spread the frosting evenly on the hot cake.

Texas Sheet Cake

Cake:
2 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon kosher or coarse salt
2 cups butter (1 pound)
1 cup water
4 tablespoons unsweetened cocoa powder
1/2 cup sour cream
2 large eggs
1 teaspoon baking soda

Frosting:
1 cup butter
6 tablespoons evaporated milk
4 tablespoon unsweetened cocoa powder
1 cup chopped walnuts
1 (1-pound) box powdered sugar
1 teaspoon vanilla extract
Preheat oven to 375*F (190*C). Grease and flour a 11 x 17 x 1-inch jelly roll pan; set aside.
Combine flour, sugar and salt in a large bowl; set aside.
In small saucepan, bring butter, water and cocoa to a boil. Remove cocoa mixture from heat as soon as it boils and immediately stir into the flour mixture.
In a small bowl combine eggs, sour cream and baking soda, mixing well; stir into the cocoa/flour mixture, mixing well. Batter will be thin.
Pour batter into prepared baking pan and bake for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Just before cake is done baking, prepare the frosting. The trick to this cake is to be sure and frost the cake upon immediate removal from the oven while it is HOT. Cool completely on wire rack before serving.
For Frosting: Bring the butter, milk and cocoa to a boil in medium saucepan. Remove from heat and stir in nuts, sugar and vanilla until smooth. Spread over HOT cake.
Makes 24 servings.

I love this cake because it reminds me of my grandmother. We used to help her bake cakes all the time and she would tell us stories. I dont think we ever made this cake, but the homey flavor and the smell always reminds me of her.
