I've decided to stay at the Barcelo La Jolla in Puerto Vallarta. Should pay for my excursions (Canopy Tour & Horseback) when I book the trip or should I arrange them when I get to Mexico?

I always arrange any and ALL excursions upon arrival of any destinations. You will save so much more money, especially if it's a group of you. Only major difference is that if you book them with the trip, it gives you (the traveler) a sense of security, etc. Based on what you're doing, I would definitely book once you're there, outside the hotel that is... worse case scenario, you can't find anything outside the hotel, the hotel people will direct you (probably at the same price as if you would have booked with your trip).

Do it when in Puerto Vallarta. Will probably be cheaper.
Check out the bar & restaurant in the lighthouse. Bull fights, but (they do kill the bull).

Schedule when you get there - you might get a better deal and see more sights for your money. Go to the Lighthouse Bar it has an awesome sight at night.
