I.e. I get a major in architectural engineering and then later decide I like environmental engineering better, or agricultural.

Not without some additional education, or training. You could try, but you would encounter numerous situations that are out of your area of expertise. There are areas where you can self-teach yourself to become familiar with new or different areas, but formal training is probanly the best way to go. Night school, whatever.

Seems like a waste to spend 5 to 6 years to get a degree in arcitecture and then switch to something else.
An degree in architecture degree is an M.S. program that you go for after becoming a structural engineer.

You can certainly change disciplines.
The further apart the disciplines are, the more
work it will take on your part.

For instance, if you wanted to change from a
a computer programmer to a doctor, expect to spend
at least 8 years in medical school and residency.

Mechanical to environmental engineering would
probably only require a year or two.
