I think you should start by letting her know that you are ready for a change and some new challenges in your life. I assume you will be taking the baby with you! ;-)
In case it gets tough, remind her that she should respect your decision and support you.

this isn't what you want to hear but, i wouldn't do it. while there are exceptions to every rule, there is a lot going against this. you are a young, unmarried mother of a baby. i've no doubt that you're mature but, a new mom and any age has their bad times.things probably seem great right now but, you've no idea what the future may hold. i'm all for taking risks when you're young but there is a child in the mix.how positive are you in this relationship? why the need to move? how far from your home is texas? think long and hard about this decision. your parents have more life experience than you. take what they say to heart if they say they don't want you to go.

Is this bf the father of your child? If not, then you can't take this child out of the state.
You are an adult and should be able to make your own decisions.

I can tell you what she's going to think...
"Oh my god.. she wants to move hundreds of miles away, with someone who has no commitment to her, to shack up and play house, and she's got NO plan for what to do if it fails."
Do you? Do you KNOW what you're going to do if your shack up dumps you that far away from home?
Be an adult, get married. Then she'll know he can't just dump you high and dry with NO recourse.

Tell her you're moving. The key word is "tell" not ask.
