Another type of finish available is called a Salad Bowl Finish. Here's a description from

Mineral oil. It is foodsafe and will not go rancid. If you search Cutting Boards/maintenance online this is what is recommended.

I purchase a product at one of the major home improvement stores (Lowe's or Home Depot, I forget which) called "Butcher block oil." It's food grade, so no worries.

restaurant quality mineral oil. It will say on the bottle it is safe for consumption. linseed oil is toxic to eat.

i wouldnt coat it at all, wood is a natural anti-bacterial and if you coat it it might stop the wood from releasing it!
