Of the four "official gospels", Paul of Tarsus and Josephus ben Matthias aka Flavius Josephus aka St. Luke controlled the content of three.
The Gospel of Paul (Matthew/Hebrews) 55 CE
2nd Gospel of Mark (aligned to Paul) 60 CE
Gospel of disciple of Paul (Luke) 75 CE
John 90 CE
Only John, is arguably from a person who knew Jesus first hand. And tellingly it is regarded by most fanatical christian scholars as the most unreliable.
Check out the range of Nazarene/Gnostic Gospels by the apostles and Jesus himself that have traditionally been excluded from the religion created by Paul of Tarsus.

Jehovah God chose Matthew, Mark, Luke and John to document the history of Christ's time on earth. (2 Tim 3:16)
Jehovah inspired word is truthful and the disciples were given that privilege as they also did the door to door and temple ministry with Jesus and the disciples even had to power to heal like Jesus.
Joseph may have died before Jesus had finished his time on earth and besides anyway Jehovah did not select him record scriptures.
Jehovah also probably chose the disciples who are of the anointed on their abilities and skills they naturally possessed. It was not Jehovah's purpose that Jesus' mother or his step father to write down holy scriptures themselves. The privilege of given birth to and raising Jesus was plenty for them and a great honor.

Because Joseph and Mary were analphabetical, like almost all the people in the time of Jesus.

We do not know for sure that Mary and Joseph did not write books for the Bible.

Joseph did not seem to be around when Jesus started his ministry.
Mary may have written, and it was lost.
She may have given her story to Matthew and Luke, and thought that was enough.
She may not have known how to write.
