Sad, sad fact of life, but it CAN go sour, and off. So eat your ice cream within three months of purchase!
However, because it is frozen, it goes bad much more slowly than milk in the fridge. The sugar in it also helps keep the bacteria from growing.
P.S. You can freeze milk. It loses some quality, but it can be really handy if it's 10 p.m. and you realize you don't have any milk for the cereal in the morning. You pop it out, thaw in the microwave for a minute or two (not to defrost it, just to get it started, then let it thaw overnight in the fridge). It will last months this way.

If you allowed it to thaw, then left it out, it WOULD go sour. Freezing keeps it from spoiling.
