I already made tortilla pizzas and quesadillas, so I would like to make something different. I don't want to make fried rice again.

I will like to make something using the tortillas. But i don't know what kind of sauce to use.

Okay, I know a great way to use SOME of those ingrediants, and some more. First, get the tortillas and place the chicken broth inside of it. You could also place beans.(It tastes good!) Then, fold the tortilla in half. Put ut onions, mixed veggies, bell peppers, and yellow cheese on top. THen, go to the store and buy some enchilada sauce. It will have directions on it of how to prepare the sauce. Any brand is fine. add the hot sauc all over the enchilada. THen cover another plate on top of that dish, or else the cheese won't melt. When the cheese is melted, then get black pepper and Taco Bell sauce and some salsa, and eat it with the cheder doritos! Hope you enjoy it! I always eat that, but without the chicken. Enjoy!

Don't see any milk or olive oil in the list; but you do have cheese.

How about combining about 3 Tablespoons flour with half a
cup of the chicken broth; stir well, set aside.

Heat about 1/2 cup chicken broth in a nonstick skillet; add cubed onions and sliced vegetables; stir well enough to keep from sticking adding additional broth/water in a thin stream as needed. When the vegetables are crisp tender, slowly add the flour/broth mixture. Let thicken over heat (stirring); spread on tortillas; sprinkle with the cheese and wrap; eat.
Some fresh ground pepper will be great with this dish.

Add an egg to the Veggies and onion and you'd have an omelet. Omit the flour/broth if you do this. Serve on tortillas.

You could also toss the broth/vegetables with cooked buckwheat noodles although I'd be tempted to add some milk during the thickening stage of the broth.

No milk; You could also add the basil and oregano during the vegetable cooking stage. Tomato sauce can be added just before ending the cooking time-- Just long enough to heat and blend. (It's real easy to Burn tomato food products.)

make a vegetarian lasagna! Heres how!
In a small pot or microwave safe bowl combine 2 cans tomato sauce 2 tsp oregano, 1 tsp. basil, 1/4 cup minced onion, and 1/2 cup water slowly heat to a simmer for 15 minutes on stove 5 minutes in microwave. Set aside.
If the mixed vegis are canned then drain if frozen defrost and drain. Now for assembly;
put a little sauce in the bottom of a round cast iron skillet or baking dish. Place 1 tortilla over sauce then some vegis then cheese and top with some more sauce. Repeat for 2 more layers then top with a tortilla then sauce and cheese. Bake at 350 for about 35 to 45 minutes. Enjoy!

How about making little pizzas? Cover the toritillas with tomato sauce and top with mixed veggies. Depending on the veggies, you can saute them a little. You can also add the onions too. Cover with monterey jack cheese. Sprinkle with oregano and basil. Bake at 375.

put chili powder with the tomatoe sause and dip the tortillas in that fry it in some butter remove it from pan and add cheese and onion roll it when completed i use up what ever i have then i bake them i usualy make several bake 350 covered 30 min mean while saute the veggies and add the udon noodles and chicken broth and some soy for a soup to eat along with the enchaladas sounds good to me

If you have any garlic and lime juice you could probably make some variety of Sopa de Lima (aka "lime soup" or "tortilla soup"). Then top it with the cheese and the shredded tortillas.

Saute' the veggies and make veggie quesadillas. Use the rice, chicken broth and tomato sauce to make spanish rice to serve with it.
