I have heard all three in context with loving something or someone. I.E. I have heard "Me encanta cebollas" (I love onions) "No me ames" (Don't love me) and "Te Quiero" (I love you) This especially confuses me as I thought Querer meant "To Want".
What is the difference? Which one do you use in which context?

Good question, but difficult to explain in English words! There are levels: when you just like something you use "querer", but if something moves your deeply use "amar", for example, you girlfriend would be happy to hear that you say "te amo", but would feel disappointed if you say just "te quiero". You can even find a song about the difference of "amar" and "querer" in Spanish!. "Encantar" is in the middle. You can use any of them with your girlfriend, but, you don't use "amar" with your family, i.e., in general, "querer" is used in this context. And you are right, "querer" also means "to want".

QUERER is the regular way to say "to love" though the literal translation should be AMAR.
Encantar = to appeal to, be delighted.
Sus encantos = her charms

If I'm not mistaken, is "Amar" more used for deep romantic love, like in the case of a married couple, and "Querer" more for a superficial "I want you" first crunch. And it seems different in Mexico, Argentina, Peru and Spain.
"Encantar" seems a bit stronger : bewitch, charm, delight.

Querer is to love/care about someone (it also means to want, like quiero hablar contigo = I want to talk to you). Te quiero, Abuela! = I love you, Grandma (but I'm not IN LOVE with you).
Amar is to be in love. Te amo, cariño! = I love you, baby (IN LOVE with you, like between boyfriends/girlfriends, husbands/wives, etc.)
Encantar is to love something. A mi me encanta montar los caballos! = I love riding horses!
Desear is to want in the sense that you really want a person (you desire that person). Te deseo, mi amor! = I WANT/DESIRE you, my love!!!
