I use onion soup mix and put it in the crockpot. Cook it for at least 6 hours. I cook mine til it falls apart. Now that's a good roast. Good luck.

There are many ways to cook a roast, as you can see from your answers. Do you have a slow cooker? If you do, get a package of brown gravy mix and a package of Lipton onion soup mix and empty both over the roast and add about 1/2 to 3/4 cup of water. Cook the roast on high for about 5 hours. You can turn it over if you want once during the cooking. My daughter loves it this way.
If you don't have a slow cooker, you can also use an electric skillet. Fill the skillet about half full of water and place the roast in the skillet. Add a package of onion soup mix to the water and cook till the roast is tender, checking pretty regularly to make sure it doesn't cook dry. When it is about done, you can peel potatoes and cut them into chunks and add to the roast and juice and finish cooking till the potatoes are done (that is when you can put a fork into them easily) I made my roasts like that for years till I decided to try a crockpot.
Either way it is delicious.
This is my favorite meal to smell cooking. It fills the house with wonderful odors and memories. My grandmother would always have a roast, green beans, potatoes, and fresh tomatoes when we would go to her house. UMMMMMM!

The best way to cook a roast is in a crock pot. The slow-cook method makes the meat come out very tender and juicy, not dried out like baking or grilling sometimes causes. If you don't have a crock pot, you can do the same thing in your oven-bake at 275-300 degrees,and completely wrap and seal it in foil, and put in a baking dish(to catch any drips). Before you cook it marinate it-this will give it flavor! There are several on the market, or you can make your own by adding whatever seasoning(salt,pepper,garlic salt,steak sauce,soy sauce,teriyaki,etc.)and sunny D or any citrus drink(this is the secret to making meat tender,it is a natural tenderizer)put all the ingredients in a zip-lock bag(meat too)and let it sit overnight in the fridge, then cook/bake for at least 4 hours. Check for doneness with a meat thermometer. If at all possible, you should really use a crock pot-it is the most fool-proof way to a very tender and moist roast, and you can also use the juices for gravy. Another good feature of a crock pot is half-way through cooking, you can throw in some vegetables, and when the roast is done so are the vegetables! Enjoy!

You are cooking way too hot for too short a time. Try 250 with can of mushroom soup and whatever herbs you want for about 2-3 hours. It will fall off the bone and be easily shredded as far as leftovers to make bar-b-que. Most meat need slow and low for tenderness. The exceptions are fine steaks,loins etc. Roasts, chuck etc. need more time at a lower temperature. This is where crockpots shine

Pot Roast
This is a simple and delicious meal.
ingredients
chuck roast
potatoes-peeled and cut into chunks
baby carrots
2 cans whole green beans-optional
can of cream of mushroom
lipton onion soup envelope
soup can of water
place roast in roasting pan, place veggies around roast, mix soups and water and pour over roast and veggies. cook for about 1-2 hours, depending on size of roast. 400 degree oven. serve biscuits to sop up gravy... Can also cook this in a crock pot for 4-6 hours on low.

Chuck roast is pretty tough so if you cook it fast, as the first answer suggested, you have some rough chewing ahead. Most people prefer slow cooking with moist heat. Google "chuck roast recipe" for some ideas if you don't like the answers you'll get here.

season both sides then sear in a frying pan.
then put into a large pot with 1 pkg. Lipton onion soup & 4 or so cups of water
cook on med. until it boils
turn to low and cover for 2-3 hours
take roast out temporarily & use broth to make gravy
put roast back into broth with:
2 chopped onions
1 bag baby carrots
3-5 potatoes cut
cook on low until veggies are all tender
It's delicious and very tender!!

I made a roast for supper...lucky you...
I browned it on both sides real good in an old black frying pan of which i fried some bacon and eggs in this morning
I added enough water to cpver the meat and let it kick for about an hour and then i started cutting up the roast into little pieces. and i added a white onion and some diced potatoes and let er cook down another hour and adjusted salt n peppa and ate!!!! and it was good!!!have some....

Season it, salt pepper granulated garlic. Pre heat the oven to 550. Place the roast in the oven for 30 minutes,then turn off the oven. Leave the door closed and remove roast 18 minutes later for med rare.

You need some peeled baby carrots, 2 cubes of Knorr beef bullion, 5 or 6 red potatoes, unpeeled, but chopped into quarters, 1 yellow onion, cut into quarters, and 1 cup water. You will also need a crock pot and whatever seasonings you normally use (ie: garlic salt, season salt, and pepper). Pour water into crockpot, put roast in then season. Crush your bullion, and place into crockpot. Put in potatoes, then carrots, then onions on top...Put lid on, and turn dial to High for about 4-5 hours, then you can turn on Low...can be served at any time after 4-5 hours...REALLY GOOD!!...If you put into oven, may take less time, but not nearly as tender
