Same reason you fart.
The cat, like you, is a mammal. It's body processes food, and expels the gases that build up. These are what we like to call, farts.
If it's really horrible, you might check with the vet and maybe try feeding the cat some yogurt to help it with digestion.

Because farting is seldom caused by sleeping, the cat's other main activity. It has to be one of the two.
