I have heard because the weight distribution of a truck is all in the front, the back end is prone to fishtailing???

All research I have done says the heavier vehicles are safer, but I can't find anything comparing trucks to cars.

Kinda depends. Both are perfectly safe to drive. A car is more manageable to handle in emergency situations, so it may help you avoid an accident easier. However, once you're in an accident, barring a rollover, the truck is typically safer. The heavier vehicle will inflict more damage on the lighter vehicle.

I prefer to drive small maneuverable cars. They are cheaper, get better gas mileage, and I've chosen to drive a car that can better avoid accidents in the first place then drive one that will just keep me safer if I'm in an accident (and at the same time inflicting more damage on other vehicles I'm in an accident with).

The truck is light in the rear end, therefore you would have "fishtailing" if you have a heavy foot.
The tip-over suggestion is BS. I have been driving Pick-ups for 30 years. If you take a turn @ 100 mph, even a car has the possibilities of "tipping over"

It is really a preference call. But, I will say that a Pick-up is less on Insurance due to the fact it carries less people

Car, causes less damage in an accident, gets better gas mileage, and is easier to drive, especially in the city.
