Fresh salsa, or salsa in a jar (red or green, mild or hotter--your preference) also tastes great to cook mild white fish in.

Dead simple... just pour a bit of the salsa in the bottom of a baking dish, lay in the fillets, then pour the rest over the fish. Cover and cook in the oven at preheated 400 for about 15-20 min or until fish flakes, or in the microwave until the fish is just cooked through (how long depends on how much fish--doesn't take long though). You could also do it on the stovetop in a covered frying pan. Really quick too.

Maine Wild Blueberry Salsa
INGREDIENTS

* 2 medium heirloom tomatoes
* 1 cup fresh or frozen wild blueberries
* 3/4 cup chopped sweet onion
* 2 cloves garlic, minced
* 2 tablespoons rice vinegar
* 2 tablespoons olive oil
* 1 jalapeno pepper, finely chopped
* 1/2 Hungarian hot pepper, finely chopped
* 2 tablespoons chopped fresh cilantro
* 2 tablespoons chopped Italian flat leaf parsley
* salt and pepper to taste

DIRECTIONS

1. Bring a pot of water to a boil. Score the skin of the tomatoes by slicing an X into the skin on the bottom. Immerse the tomatoes in boiling water for about 15 seconds. Remove and place into a bowl of cold water. The skins should slip off easily. Peel the tomatoes, cut in half and remove the seeds. Chop the tomatoes and discard the seeds.
2. In a medium bowl, combine the tomatoes, blueberries, onion, garlic, jalapeno pepper, Hungarian pepper, cilantro and parsley. Pour in the rice vinegar and olive oil and stir gently to mix. Season with salt and pepper. Cover and store in the refrigerator overnight to allow the flavors to blend. You may wish to drain the salsa slightly before serving, depending on how juicy your tomatoes are.

Simple.Place a spoonful of salsa on a cracker,top with mozarella cheese and bake till cheese melts.Tastes gr8.

Quesadillas! Put a tortilla in a frying pan on med-med-high. Add cheese, cooked chicken, steak, shrimp, or turkey (if you want meat), salsa, onions and peppers (if you want). Cook until the cheese starts melting, fold in half, slice and serve......

Try Mexican chicken.The recipe is two med. jars of salsa I usually mix mine (1 jar mild) & (1 jar medium); put in one chicken bullion cube, plus 1/2cup water ;diced 1/2c. green pepper & 1/2c.onion;2-6 oz. cans corn(whole kerenel)drained also add 6 or8 oz. can tomato sauce ;1/2c. or less minute rice ,(depending on how dry you won't it for a filling ); 5 or6 chicken strips (cut in half),simmer for about 20 minutes, I usually add beans to mine ( kindey beans); drained, it's makes a great filling for burtioes.
