Theoretically, the skin is the healthiest part of the fish, as this is the greatest depositary of Omega-3 acids. However, due to mans environmental insensitivity, it is also the biggest depositary of toxins absorbed by the fish. These toxins are absorbed by fish living in coastal waters, and gets passed up the food chain to deep ocean dwellers as these fish are eaten in turn. The good news is that salmon are an exception, because they feed on plankton and vegetative matter (not being carnivorous), so you run no risks here.

Salmon skin contains a lot of flavour and taste.
Cook fillets lightly salted skin side down and leave it until it is about 2/3's cooked.
Turn and cook for a few minutes longer and then let rest.

If you are serving guests indicate they have the option of removing the skin if they wish.

Cook the salmon, and most other fish, with the skin on as the skin will hold it together, so it doesn't flake as it is cooking.

I like the skin crispy so have the grill in the oven on for the last few minutes.

The skin is left on for cooking but after I serve myself a piece, I pull it off before I eat the salmon. It doesn't hurt anything, it's just a habit of mine.

Salmon skin is actually good for you...it's where the bulk of the omega 3 fatty acids are.

Yes you can cook it, skin on, but I don't eat because it doesn't taste good.

It's not bad for you at all, it is actually better for you than the meat, but people generally can't stand the thought of eatting it....

i love the skin i never let them cut it off at the fish counter although they always ask !
