The Spartans would dominate, namely because of armor and tactics. Heck even if all of the Japanese Samurai were to fight against the Spartans the Spartans would win for those very same reasons.
There is a great deal of difference in mass scale combat than in one on one fighting. The Spartans were the best ever.

It would depend on the specific military tactics that each group employed and the type of weapons used. It is well known that the spartans were very adapt at fighting together as a group. However, if they were split apart by a specific tactic one spartan vs. one shaolin warrior more than likely would not stand a chance. Even better one of the heroes of chinese history during the time of the Three Kingdoms would easily dispatch a spartan with no problem. Now the Spartan's ability to adapt would eventually come into play and give the chinese a run for their money.

The Spartans would win because Shaolin 'monks' are not warriors they are Buddhist priests who took up kung fu as a method of self-defense on long journeys through desolate parts of China. The Spartans were soldiers trained in all sorts of military tactics.
Now if the Spartans fought the Chinese Emporers troops, then I think the Chinese would overwhelm the Spartans.
Don't forget that the Romans beat the Spartans in 195 B.C. (The Laconian War) and Rome took the Greeks as slaves!

Spartan VERY easily!
Shaolin doesn't wear armors. They doesn't have armor or shields. So all Spartan gotta do is to keep their shields close together and wait for Shaloin to get close then stabs them to death with spear or sword.
It would be just a walk in park for Spartan since they're so use to slice through more well equipped and trained military. So what make you think they would have a problem with bunches of trained fighter who are armed with inferior weapons and no armor of any kind who have never trained to work together as one team in their entire life?
If they try to flee, Spartan would set fire to their home area and destroy everythings. So lure them into gureilla warfare is out of the question as well.

Shaolin monks trained not to go to war, but to defend themselves, that wasn't the case with Spartans, are being soldiers was their only profession.
The spartans would win since they live for war, monks were awesome individuals, but were not a war machine

i would vote for shaolin. They trained in a wider variety of weapon and hand-to-hand combat forms than spartans did, and they lasted alot longer than the spartans (still exist). In fact, all the armies of china became afraid of the shaolin monks and sought to exterminate them. Of course, they failed miserably and nearly crppled their own military strength.
Also, in one of these battles, Grandmaster I ching ming ( ithnink it's spelled) was recoreded in history to personally buy his monks time to escape by holding back one of china's armies, alone, and left a valley filled with their corpses in the span of an afternoon.
Another thought occurs, shaolin monks DID have armor. General Kwan was a practitioner of shaolin and even added his kwan Dao (kwan's knife) skills into the shaolin system. The shaolin monks were generally peaceful.
But it is important to remember that buddhists will do whatever is necessary to help other people. The shaolin monks actively participated in china's defence many times, and china's armies derived all, literally, of their training from shaolin monks.
I foyu doubt my claim that buddhist monks will fight back, then you haven't had much education in terms of the oppression of the Tibetan people. The monks of Tibet had to smuggle the Dalai Lama out of Tibet and were ready to give up their monastic vows to protect him.
Some monks became guerillas while others kept their vows and continue to make political protests against chinese oppression, A rinpoche (a higher class monk) was photographed to run inside a burning building during the famous tibetan shootings and burned most of his skin to free the monks that were locked inside by the chinese. He was later tortured and killed in prison. Many monks were or are being tortured for protesting the chinese occupation.
Please, don't ever say that a buddhist monk won't fight. They struggle the hardest against injustice. You can see films and documentaries about these occurences. Cry of the snow lion is one such good movie
