Cinco de mayo is often misunderstood as Mexico's Independence day, in a way it sort of is, but not really. It was the war over the money Mexico owed to France, Cinco de Mayo is the celebration of the victory of the battle. Sadly, the war was lost in the long run. Cinco de Mayo, The Fifth of May.

As for recipes, Quesidillas are great, and tasty. Rice Pudding, Milk Cake, Beans and rice, Nachos and Cheese...Anything mexican.

The only important thing to me about Cinco de Mayo is that it happens to be the day I was born on, many years ago.
