My most requested holiday recipe.... even people who say they don't like dates think this is scrumptious!!!

Delicious Holiday Cake

1- 8-oz. pkg. chopped dates
1 cup boiling water
1 cup sugar
1/3 cup margarine
2 eggs
1 ¾ cup flour
1 tsp. soda
1 tsp. vanilla
3-4 large ripe bananas
1 cup chopped walnuts
12-oz. carton Cool Whip
2 Tblsp. powdered sugar
Maraschino cherries

Pour boiling water over dates and let stand.
Cream together the sugar and margarine.
Beat eggs until light and add to creamed mixture.
Beat again. Mix in flour, soda, and vanilla, then
date mixture. Pour into greased and floured 9x13
pan. Bake at 350 for 30-35 min. When cake is
almost cool (still slightly warm), break into 1-inch
chunks and put in a large bowl. Then add:
3-4 large ripe bananas, cut into ¼ in. slices (those
starting to get over-ripe work best), and
1 cup chopped walnuts to cake chunks. Fold gently
together. Rinse a bundt pan with cold water (do not
dry), and pack the mixture lightly into it. Cover air-
tight with plastic wrap and let stand overnight or at
least 12 hours in refrigerator. When ready to frost,
un-mold cake on large plate. Set pan in warm water
for a minute (be careful not to get water in the bundt
pan) and it will unmold very easily. Frost entire cake
with 1 (12-oz.) carton Cool Whip sweetened with
2 Tblsp. powdered sugar. Garnish with maraschino
cherries and holly leaves for Christmas. Refrigerate
until ready to serve.
NOTE: The bananas will turn dark and almost
disappear into the cake, making it very moist. No one
can ever figure out what’s in it, and everyone will want
the recipe. Very pretty as well as delicious!

Planning early, eh? I like gingerbread. Mmmmmmm. Nice warm ginger bread, just out of the oven, made with a little extra brown sugar and a little extra ginger, it can be iced or not. Of course it needs to be accompanied with a huge glass of ice cold milk. Mmmmmm. Thanks for reminding me!

ummmm...christmas is 7 months away but i really like either pumpkin cake with cream cheese frosting or red velvet cake with white frosting (cream cheese...and ALL HOMEMADE!!!!....pumpkin and velvet ALL HOME MADE!
