The first source listed is a great start, and he is not a Catholic, but on this is in full agreement with Catholic Doctrine and has been published in a Catholic collection of articles.
The 2nd source (Kreeft) is a Catholic Apologist, whom I recommend you become very acquainted with, he's excellent!
The 3rd source, outlines the historical heresies mostly concerning the trinity, and will allow for a more in-depth understanding of the orthodox Trinitarian view. Again, he isn't a Catholic author, but on this he will be in agreement.

Hello Shlane,
I would direct you to do some research on the elevation of jesus to godhood. Look up the First Council of Nicea 325AD, where it was argued whether jesus was made of the same substance as god, or similar substance as god. Then look up the Nicene Creed, which resulted from that debate.
The trinity, or the triune god concept would not have survived without this first step of the Nicene Creed.

Well, first of all, I had an answer for you, but God allowed Satan to mess with the internet so that I could not send you my answer. That is why I am typing this first paragraph to let you know why it took so long to reply. The devil may have won the skirmish but I will start over again now and by the grace of God give you my answer. Sorry you did not receive my answer long ago but you know how Satan is. In spite of this, I give glory to God and shall start answering you right now.
I will suggest, since I do not remember all I had written, a book called, 'What the Bible teaches'. It is put out by Warner Press. The topic is delt with in this book.
I must warn you that there are those who believe that you and I and denominations, many movements, and many non-denominations, that believe in the triunity of God, believe that we all believe in polythiesm. The do not know the scriptures. They may know verses of scriptures but they really do not know scripture. If they did, they could rightly divide the Bible, and not preach and teach such unGodly mess. The Jesus only people as oneness persons believe who are known as Apostolic Pentacostals, believe that God is a manefestation of Jesus and the Holy Spirit is a manefestation of Jesus. They believe, whether they want to admit it or not, that the name of God is Jesus, and the name of the Holy Spirit is Jesus. WE believe that Jesus is God himself as well as the Holy Spirit being God himself. They refuse to accept that because of our finite minds, we can not understand how God the Father, God the Son, and God the Holy Spirit can be seperate individual and unique, yet be God at the same time.
The Nicene (hope I spelled it correctly) and Apostle's creeds tell us this.
Remember that in this day, the last days, such false doctrinal teachers and preachers will be roaming this earth. God is Triune and WE do NOT believe in polytheism.

In Genesis God says "...like us." Now this leads Christians to believe that He was talking to Jesus and the Holy Spirit. I always wondered what the Holy Spirit was, as it's the least explained version of the Trinity, and if it can enter all of us, is there lots of Holy Spirits, or just one that can divide itself.

I don't understand. Did you not attend a Catholic school, or at least attend CCD? Anyway, God is tripartate, in that there are three aspects of himself, that you already know, the Father, the Son, and the Holy Ghost.
All three aspects have always existed, even before the manifestation of Jesus in human form. Look upon it as three personalities. We all have different sides to our personae, this is the same concept.
It cannot, however be fully explained by man, as this is one of the Mysteries.
