This is an awesome cake from weight watchers.
1 box of angel food cake mix and 1 can of crushed pineapple.
Mix the 2 together(juice included) and put in a lightly sprayed 9x13 pan at 350 degrees. The timing will depend on the cake mix so leave it in for what the box directions say. Use low fat cool whip as the frosting and sliced strawberries as garnish. It is delicious and light. I make this recipe all the time.

A Fruit Pizza is a cool alternative. You take and roll out choc chip cookie dough on a pizza pan, Cook till golden brown then make a crean cheese whip cream mix spread on cooled cookie then add Sliced strawberries, kiwi's, bannana's cherries...or what ever fruit you like. Taste good and it not as fattening as the cake. And besides it's her Birthday....She's allowed to cheat a little!!!! Wish you well with whatever you choose.

www.cookinglight has an excellent low-fat recipe for lemon squares. Don't search for lemon bars, they call them lemon squares. They're really good, I've made them several times. And they're still moist and cakey. I'd think a candle could easily stand in it.

fruit tarts are a great way to go, or there is this incredible stuff called junket? it's like a fruit pudding, you can add that to angel food and light whip cream and it's very nice.

Let's not get ridiculous about diets. It's her birthday. She can have a small ( or big, if she wants) slice of cake once. You can sub applesauce for the oil if necessary. But, darn, it's her birthday. Once a year? Will destroy a diet? Get real
