You did mean the Dallas Cowboys, didn't you?
Okay, seriously, most cowboys did not regularly wear sidearms. Why would they? They were out on the range for weeks or months at a time. The only dangers were wild animals and possibly Indians, and rifles were more useful to deal with these threats. Cowboys were not soldiers. They had no "battle gear." They were just regular guys trying to earn a living. I'm sure if they happened to get into a fist fight, some would fight with honor and some wouldn't. Quickdraw style gunfights were invented by fiction writers trying to sell books about the Wild West to East Coast city folk! I think you've seen way too many Westerns...

To go along with Roger's answer, they brawled. They hit with what they had, as hard as they had, and hoped it worked. Honor was a pistol duel, and most knew that "honor" would get them killed; being better would let them survive.
On another note, I saw a show on the History channel that talked about how the cowboys used to take the barrels off their revovlers when they needed to conceal their pistols or use them at close quarters, and fire straight from the cylinder. Thus, the "snubbie" was born.

The 6-shooter at 12 paces WAS the only "honorable" way to fight but knives, dirt, bar stools, bottles, chairs, fists, rifle butts (when rifle was out of ammo) were used for close combat.
BTW...This is just proof that if a gun isn't available, the bad guy will find something else to do his deed.

If they couldn't find or didn't want to use a gun they most likely would have used whatever else was close at hand like a bowie knife or their own fists. There was no honor it was about defending what was rightfully yours. Laws about self defense were a lot less strict than they are now.
