I can't say much on 80s (not born/not watching films yet) but I do like Stanley Kwan's "Rouge" - the novel is good too. The acting of Anita Mui and Leslie Cheung was phenomenal.

The 90s....
Wong Kar Wai's "Chungking Express", "In the Mood of Love"
Zhang Yimou's "Raise the Red Lantern", "To Live" (already beginning the trend of killing of most movie characters...)
Ann Hui's "Love in a Fallen City", "Summer Snow" (Women Forty). (July Rhapsody is good too)
oh, and of course the vast number of Jin Yong inspired martial art films (faithful reader of Jin Yong), and the Stanley Chow comedies, just because they made me laugh really hard. (only the 90s ones - I don't really like the 00s ones)

And why do I like them? That a tough question... I guess it would be the breathless feeling I'm left with after going through the whole film. And then there is the storyline and the script itself - complex, with good dialogue, lots of undertones, lots of description on human nature, and lots of food for thought. Good acting is essential, of course. And I love Wong Kar Wai's type of blurry, dreamlike shots - beautiful.

I do think Zhang Yimou's newer films are not as good as his old ones, though. I think he's now putting too much effort on big projects with big budgets, beautiful scenes and beautiful clothes, but much less for the development of the characters. His films are still good, but seem to have lost the old spark. (Curse of the Golden Flower was somewhat disappointing - too predictable)

P.S. Jebbie is right, "Farewell, My Concubine" is good too. I'm addicted to the books of Lillian Lee. "Rouge" is also written by her.
Being a Chinese, I myself do not find the sexual component of Farewell My Concubine disturbing whatsoever - but I'm in Hong Kong, and of the "younger generation", so I am more open-minded than many.

Farewell, My Concubine (Ba Wang Bie Ji) directed by Chen Kai Ge. I enjoyed the book by Lilllian Lee, but the movie is a bit different. First, I love the spectacle of Beijing Opera, and the movie gives it to you in small doses. Second, it gives a general overview of the cultural revolution and history of China. But the main thing about the movie that I like is its depiction of how human relationships change and develop and its inquiry into issues of gender identity. Some Chinese I have spoken to have said that they (meaning Chinese as a whole) are not comfortable with this movie due to the sexual issues involved and I am curious to know if this is really true.
Chen Kai Ge's subsequent films all had a more "slick" presentation to them, whereas Ba Wang was well made but seemed to have more raw emotion...

There are so many other Chinese films from that time period that I like... Raise the Red Lantern (Da Hong Deng Long Gao Gao Gua) I like especially for the fabulous performance by Gong Li; I think it's one of her best films.

As for style of directing, my favorite is Happy Together directed by Wong Kar Wai. This film is the epitome of his style, in my opinion. If you like his movies, you'll love this one. If you don't, you'll hate it. Many people don't really get the point of this movie, I think. But it is not unusual for someone to be in love with another who treats him so badly. The film makes you think about why people often love those who have no love for them or simply use them.

I like a movie called, "A Father With His 25 Children." It is a dramedy about a man who boasts on TV that he is like the father to all the orphans, and then all the orphans show up on his doorstep the next day!

Also, "Ju Dou," "Xiu Xiu: the Sent-Down Girl," and "Temptress Moon."
