Your body has many ways to fight infection. One way is the mucus production and tiny hair-like things that line the respiratory tract (cilia). The mucus is thick & sticky & is used to trap foreign objects and then the cilia beat back towards the nose/mouth to carry it away. When you have a respiratory infection, the infection stimulates that body to produce more protecting mucus (it also is irritating & the body tries to diminish the irritation by making mucus)

the other purpose is to protect the lining in your nostrils and throat from getting raw and actually warding off extra sickness
