Ham would be lovely since it seems like a good spring food to me. Do something fun to it with the glazing, like spear candied cherries into the ham through pineapple rings with a long toothpick, if you want to be fancy. Or you can find all sorts of ham glazing recipes that aren't quite as showy as that one. I think that one also gets basted with pineapple juice mixed with a little brown sugar. Yeah, don't need a dessert with that one! If you do a nice glaze of some sort (go to www.cooks.com and look for ham glaze recipes if you're fresh out of ideas,) have a pretty green veggie with it, some kind pf potato, and serve fresh baked biscuits or rolls, I think you'll have a winner.
A fun and simple way to make potatoes fancy is Hasselback's Potatoes. Peel a good-sized potato for each guest and two extras. Slice vertically into each potato, without cutting clean through, several times -- up to 10-12 cuts into each potato if you can manage it. Brush melted butter or margarine over the tops and let it seep down into the cuts. Sprinkle with Parmesan cheese. Bake about an hour at 350 degrees Fahrenheit.

It's harder to get more elegant and delicious than Chicken Cordon Bleu:
Ingredients:
3 large boneless chicken pieces (halved) or 6 small
6 thin slices baked ham
6 oz. Swiss cheese, cut into 6 sticks
¼ cup flour
3 Tbsp. butter or margarine
1 can (3-4 oz.) sliced mushrooms
1/3 cup dry white wine
¼ cup Heinz 57 Sauce
Season chicken with salt and pepper
Instructions:
Pound each chicken piece flat (pound between pieces of waxed paper.)
Place a ham slice and cheese stick on each breast. Tuck in the sides, roll jelly roll fashion pressing to seal. Tie securely with kitchen thread or use toothpicks. Coat rolls in flour; lightly brown in butter. Place rolls in 10x6 inch baking dish.
In same skillet, stir in mushrooms and next 3 ingredients; heat. Pour over chicken, cover and bake at 350 degrees for 1 hour until tender. Serve with rice.
(Note: this makes six servings, but the recipe is easily doubled or even tripled for a crowd. )

A few things come to mind.....if you don't mind the expense, a crown roast of pork or a standing rib roast (beef) are very impressive. Google for serving portions and cook times. I made 2 of the pork crowns for Christmas this past year, and now everyone wants it to be the "new" tradition!
Otherwise, a spiral-cut ham is pretty & simple, as is lasagna, manicotti, and stuffed shells.
Many dishes with skinless boneless chicken breast are impressive & easy...google for recipes on that, too.

Your basic Boston butt (ham) which is actually the tender part of the shoulder. Ir's already cooked, so just do the criss-cross thing on the rind, insert the cloves, dab on some brown sugar, bake for 2 hrs at 250 -and there you go!

lasagna ,,stoufers is the bomb if you dont want to make home made and its so easy too,its not that expencive and the price of making you own is just about the same if not more!! everyone like it usualy and no fuss..a large try is only about 20 dollars really i think its less than that ,,,other ideas are a big pot roast with veggies that is pretty easy and yummy,,other things to make can be chili see links for other ideas
