This brownie recipe is GREAT. It's the perfect combo of cake and fudge; just enough of and not too much of either.
I'm sure it will be one of your favorite brownie recipes too.

INGREDIENTS:
8- 1 ounce squares of unsweetened chocolate
1 cup butter
5 eggs
3 cups sugar
1 tablespoon vanilla
1-1/2 cups flour
1 teaspoon salt
2-1/2 cups chopped pecans or walnuts, toasted (hazelnuts are also pretty good)

PREPARATION:
Preheat oven to 375 degrees F. Grease a 9 x 13 pan.
Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed.

Stir in the nuts. Pour into prepared pan.
Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.

** It's not required, but this is when it's very nice to own a stand mixer.

While I LOVE the last recipe, I'm not a big chocolate person, so I usually make butterscotch blondies instead. This is a good recipe, if you ever want a change from the usually chocolate recipe:

36 bars 45 min 10 min prep
Change to: bars US Metric
3/4 cup butter or margarine (softened)
3/4 cup firmly packed light brown sugar
1/2 cup sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 2/3 cups butterscotch chips
1 cup walnuts

PREPARATION
Grease 13 x 9 inch baking pan.
Beat butter and sugars in a large mixing bowl until creamy.
Add eggs; beat well.
Stir together flour, baking soda and salt; gradually add to butter mixture, blending well.
Stir in butterscotch chips and nuts.
Spread into prepared pan.
Bake 25 minutes or until top is golden brown and center is set.
Cool completely in pan on wire rack.
Cut into bars.

These are very rich and very yummy. I found a glaze that was a nice match for this recipe. Just drizzle over the warm blondie: Maple Butter Sauce 3/4 C. maple syrup 1/2 C. butter 3/4 C. brown sugar 1/2 C. walnuts, chopped (optional) (melt butter in sauce pan, add remaining ingredients, and you're finished!). Enjoy!

FAVORITE BROWNIES EVER!!! Big family and their always a hit!! They are an excellent cakey texture. Most brownies are too chocolatie with chocolate chips but not these!!

2/3 cup butter
2/3 cup cocoa
2 cups sugar
4 eggs (WELL BEATEN)
1 cup flour
1 tsp. baking powder
1 tsp. salt
2 tsp. vanilla
1 cup chocolate chips (or nuts)

Melt butter and stir in cocoa. Turn the mixture into a mixing bowl and stir in sugar and eggs, well beaten. Stir in flour and baking powder and salt. Add vanilla and fold in chocolate chips. Spread the batter 1/2 inch thick in a buttered, shallow pan (I use 9x13). Bake for about 35 min. at 325 F, or until shiny brown crust forms. Cut into small bars with sharp knife and cool on a cake rack.

Again, I really love this recipe!!
