I am an Aussie who would love an easy recipe for pumpkin pie - nothing too fancy as I have never had it before......please help?

Libby's® Famous Pumpkin Pie

Original recipe yield:
1 - 9 inch deep dish pie

PREP TIME 10 Min
COOK TIME 1 Hr
READY IN 1 Hr 10 Min

INGREDIENTS

1 (9 inch) unbaked deep dish pie crust
3/4 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 eggs
1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk

DIRECTIONS
Preheat oven to 425 F.
Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
Bake for 15 minutes. Reduce temperature to 350 F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

Double Layer Pumpkin Pie

Prep Time: 20 mins - Ready In: 4 hrs 20 mins

4 oz. PHILADELPHIA Cream Cheese, softened
1 Tbsp. 2% milk or half-and-half
1 Tbsp. sugar
1-1/2 cups thawed COOL WHIP Whipped Topping
1 ready-to-use graham cracker crumb crust (6 oz. or 9 inch)
1 cup cold 2% milk or half-and-half
1 can (16 oz.) pumpkin
2 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding and Pie Filling
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves

MIX cream cheese, 1 tablespoon milk and sugar in large bowl with wire whisk until smooth. Gently stir in whipped topping. Spread on bottom of crust.

POUR 1 cup cold milk into large bowl. Add pumpkin, pudding mixes and spices. Beat with wire whisk until well mixed. (Mixture will be thick.) Spread over cream cheese layer.

REFRIGERATE 4 hours or until set. Store leftover pie in refrigerator.

Makes 8 servings

Pumpkin pie

Pie crust ingredients:

1 and 1/2 cup rice flour

1/3 cup of ground almonds (may use hazelnuts or walnuts instead)

1/4-1/3 cup olive oil (or use coconut oil for its many healthy properties)

2 TB maple syrup

1-2 TB water as needed



Filling:

1 can of pumpkin puree (Be sure that it only contains pumpkin)

2 TB of ground flaxseed as egg substitute (soak in 6 TB of hot water for 15 min)



Instructions:

Preheat oven to 350 degrees.
Mix crust ingredients and press mixture into the bottom of the pan.
Mix pumpkin puree and ground flaxseed and pour into pie crust.
Bake pie for 40-60 min as instructed on the pumpkin

1.5 cups sugar
1 tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
4 large eggs
29 ounces Pumpkin filling
24 ounces Evaporated Milk
2 unbaked Pie Shells

Combine all spices in small bowl. Beat eggs in large bowl. Stir in pumpkin filling and spices. Slowly incorporate evaporated milk

Pour into pie shells

Bake in preheated 425 degree oven for 15 minutes. Reduce oven temp to 350, bake 40-50 minutes, or until inserted knife, near center of pie comes out clean. Cool for two hours. Then refrigerate.

This is a pretty basic recipe, and is what a traditional pie is, if you don't like ginger, it can be removed without any harm or replacement needed.

hi there,
you need
3 cups pumpkin, diced
3 eggs
1 cup evaporated milk,
1/2 cup heavy cream
1 cup sugar
1/3 tsp. each nutmeg, ginger, salt
1/4 tsp. cinnamon
1/4 tsp vanilla extract
in medium pot add pumpkin in 1 1/2 cups water add salt, simmer 15 min, til water is almost gone, remove add spices and mash like potatoes, set aside let cool,
beat eggs with milk and sugar, add to cooled pumpkin mass stir, pour in pie shells and bake at 300°d. for 10 min, reduce heat to 225°d for another 50 min, than check if the middle is set, turn of heat let pie cool in oven with closed door remove and enjoy

Buy a can of Libby's pumpkin and follow the recipe on the can.

The one on the Libby's can is very good and pretty much a standard recipe used in the US at Thanksgiving.
