We received a box of bacon wrapped filets when we replaced our son's windshield and I want to cook them like they do in restaurants. I am thinking they brown them in a pan first, then throw them in the oven. Is this correct? If so, what temperature? How long for medium-well? I'm not much of a steak person and I don't want to mess up these steaks. I don't need any recipes, I just want to cook the steaks, then make twice stuffed potatoes and another side with blackberry cobbler for dessert. Thanks!

You got it right. Sear 'em in a hot pan first, then whack them in the oven at around 400F and watch them for about 15 minutes and keep checking the doneness. It could take longer than 15 minutes.
But they're good, I make mine with a cajun cream sauce.

I cook these all the time. Heat an oven safe skillet on med. heat with a little olive oil. Make sure the oil is pretty hot but not smoking. Place steaks in skillet. ( a good size skillet can hold 4, if your pan is smaller don't crowd them. They need a little room) Brown that side for about 2 mins, then turn over and repeat. If you are concerned about the bacon being done turn two of the steaks on their sides for a few seconds rotating then do the other two. Place the skillet in a 350-375 oven for about 4-5 mins. depending how ou like your steaks. We like ours med. rare so I use less time.
A hint: make a tight closed fist, touch the soft tissue between your thumb and first finger. This is how the meat will feel for wel done. Loosen our fist about half way this is how the steak will feel if you want med. rare, open you hand all the way this is rare. Meat taste best at med rare to just seared.
dinner sounds great when should we be there? LOL Good luck

twice baked potatos
This is a variation on baked potatoes that my parents taught me. If you love your potatoes with lots of sour cream and butter you'll love this one.
INGREDIENTS
6 large baking potatoes
1 (16 ounce) container sour cream
1/4 cup shredded Cheddar cheese
3/4 cup butter
salt and pepper to taste
3 slices American cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bake potatoes for 1 hour or until soft.
Cut enough of the skin off the top of each potato to be able to scoop the potato out of the skin and into a mixing bowl.
Add butter, sour cream, grated cheese and mix together well. Add salt and pepper to taste.
Fill the skins with the mix and top with 1/2 slice American cheese. Bake for 20 to 25 minutes just until heated through.

Place meat on broiler pan 3" to 4" from heat. Broil 5 to 7 minutes each side for rare. Broil 8 to 10 minutes each side for medium. Brush with butter mixture occasionally during cooking.
Your side dishes sound wonderful. Your family will surely enjoy!!!!!

I would suggest you put them under the grill, about 8" from the top element and grill for about 7 minutes each side. (3/4"-1" thick)
Add a few more minutes if they are thicker.
Use a rack in the roasting pan to catch the fat as it drips out

Damn, I hope you'll invite me over when you're done cooking!
But when I cook steaks, I under-do it a little since they're still cooking inside when you take them off the grill.
