I used to use alot of recipes like the ones above, until my aunt showed me a different way of doing guacamole! This is a chunky version!

4 avocados
1/2 med size purple onion diced
2 tomatoes diced ( more if you like tomatoes i do more :) )
5 small limes ( don't be scared )
1/2 tbsp minced garlic
salt, pepper to taste

first cut the avocados in half and pit them. To cut them up leave them in the rind. Cut from one side to the other up in about 1/4 an inch ( eye ball it ) . do this across, and length wise. ( it'll look like hatching ) use a spoon to scrap along the sides and underneath. The avocado chunks just pop out! Stays clean this way! add chopped onion, and tomatoes. Juice all 5 limes over the mixture. add the garlic and salt and pepper to taste. Chill for at least 20-30 minutes.

This is very easy to throw together with few ingredients!! Just easier than getting 15 things together!! This tastes awesome!! and the lime gives it that extra kick!! This never lasts long at my house!! Good luck!

This recipe has actually gotten me invited to parties! I picked it up from a Mexican chef. You can make it in as large a quantity as you need; just multiply the ingredients.

For each 2 people you are serving, you will need:
1 large ripe Hass avocado, cubed (remove skin and pit!)
2 tablespoons olive oil
2-3 sprigs fresh cilantro, chopped coarsely (about 2 Tbs)
1 teaspoon dried oregano, crushed immediately before using
1 teaspoon salt
juice of 1/2 a medium lime
1/4-1/2 of one jalapeno pepper, chopped finely
1/4 cup onion, chopped finely
1/4 cup tomato, diced
1/2 tsp Fruit Fresh (optional - sold with canning supplies)

In a small bowl, combine olive oil, cilantro, oregano, salt, lime juice, and jalapeno pepper. Set aside.

In a non-metallic bowl, gently mash avocado with a fork. I like to leave mine pretty chunky. Sprinkle Fruit Fresh powder on to keep it from going brown.

Add olive oil mixture, stirring to mix thoroughly.

Gently stir in tomato and onion.

Serve at once with corn chips or warmed flour tortillas, or refrigerate tightly covered. I have read that storing guacamole with the pit of the avocado will keep it from turning brown.

The stone dish that they use to serve guacamole in mexican restaurants is called a molcajete. It adds a nice authentic touch to your presentation.

take three avocados, remove the insides, and put into a bowl.
get rid of the seed,by the way
Take one lemon, and cut in half
Get out your kosher salt, or whatever salt you like
Cilantro (just get a small bunch)
1) mash up the avocados in the bowl, mash 'em, smash 'em, get them really mooshed up, and while you are doing that...
2)add in salt, slowly, now make sure it gets incorporated fully into the avocados, keep tasting our stuff to make sure it tastes right, by the way.
3)Take the lemon, and squeeze the heck out of it to get ALL the juice into the avocado mixture..then moosh things around again to get everything everywhere
4)WASH and chop up all the cilantro into tiny peices, and stir in 1/2 of it into the guacamole
5)(optional,but we like it) take 1/2 an onion, and cut it up really small and add to avocado, and mix it up
AND
6)(also optional,but good) chop up a tomato into small peices, and add it,too.This is more like the big restaurant kind here, like my Abuelitas and uncles restaurants.
stir everything, taste, and see if you want more salt, I LIKE salt in my guacamole, especially to offset the lemon.
Now, to top it off with the remaining cilantro
ta da! You have expensive authentic mexican restaurant guacamole!
By the way, get some of those GOOD 'restaurant style' Tostito's chips (or if they're too expensive, whoever is cheapest,but good) and eat!
Don't forget salsa!
By the way, Costco has some Carnitas (mexican pork) that are literally THE BEST, and come frozen, so you can have htem whenever you want. You'll like it

This is how I always make mine. I don't really know exact measurements, I usually just kind of guess how much I need and taste it to see if it needs anything.

Mash up 4 avocados. Add 2 tsp minced garlic, 2-3 tbsp. lime or lemon juice, 3-4 tbsp. diced onion, a splash of Tabasco and salt and pepper to taste. Sometimes I add some diced tomatoes, but I usually leave them out.

My brother's girlfriend doesn't really even like guacamole, but she loves this kind! She's always asking me to make it. Hope that helps!

1/2 Red Onion, Diced
1-2 Jalapeno Peppers, Minced
4 Roma Tomatoes, De-seeded and diced
1/2 bunch Cilantro Finely chopped
Juice from 2 limes
6 avocados diced
Salt and pepper to taste

Combine ingredients. To reduce heat from peppers remove seeds and white membranes inside. Use more peppers and leave in seeds and membranes if you want a spicier dip.

Guacamole

1 ripe avocado
1/2 cup sour cream
2 teaspoons lemon juice
3 tablespoons oil
few drops Tabasco sauce
1/2 teaspoon chili powder
salt

Mash Avocado. Mic in sour cream, lemon juice, oil, Tabasco sauce and chili powder. Season with salt to taste. Cover. Chill until ready to serve.

your avocados should just be mildly soft.

Sprinkle at least a teaspoon of lemon juice per avocado over the peeled fruit. Salt to taste. Sprinkle onion powder and garlic powder to taste. Mash up and stir....

that's it!
