My mom wants to know if anyone has a good recipe for caramels... lol thanks.

maybe I should have rephrased that, a recipe to make caramels.

Here's a recipe that is delicious and easy and you can't mess up! Enjoy....
Note: it will take some time to bring it up to 250 degrees. Be patient and you will be rewarded. Oh--and use a large pot.

Caramels

2 cups white sugar
1 cup packed brown sugar
1 cup corn syrup
1 cup evaporated milk
1 pint heavy whipping cream
1 cup butter
1 1/4 teaspoons vanilla extract
DIRECTIONS
Grease a 12x15 inch pan.
In a medium-size pot, combine sugar, brown sugar, corn syrup, evaporated milk, whipping cream, and butter. Monitor the heat of the mixture with a candy thermometer while stirring. When the thermometer reaches 250 degrees F (120 degrees C) remove the pot from the heat.
Stir in vanilla. Transfer mixture to the prepared pan and let the mixture cool completely. When cooled cut the Carmel into small squares and wrap them in wax paper for storage.

Honey Caramels

2 cups honey
1 cup evaporated milk
1 cup chopped nuts
3 tablespoons butter
1 teaspoon vanilla extract
1/8 teaspoon salt

Butter an 8 x 8 x 2-inch pan; set aside.
Mix honey and evaporated milk in a heavy saucepan; cook over medium heat to the firm-ball stage (see note).
Remove from heat and stir in nuts, butter, vanilla and salt. Pour into prepared pan. Let cool before cutting into squares.
Makes 16 pieces.

Note: 'Firm-ball' describes the point at which a drop of boiling syrup immersed in cold water, when removed, forms a firm ball that can be flattened a little. On a candy thermometer, the firm-ball stage is between 242° and 248°F.

Caramel Apple Pie
INGREDIENTS
10 individually wrapped caramels
1/2 cup all-purpose flour
3/4 cup caramel ice cream topping
2/3 cup chopped pecans
1 teaspoon lemon juice
4 apples - peeled, cored and chopped
1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Unwrap and cut caramel candy in half. In a large bowl, mix candy with flour. Stir in apples, ice cream topping, and lemon juice. Pour filling into pie crust and sprinkle with chopped pecans.
Place in oven on a sheet of foil to catch the drips. Bake in preheated oven for 50 minutes, or until golden and bubbly.




Caramel Squares
INGREDIENTS
1 (14 ounce) package individually wrapped caramels, unwrapped
3/4 cup shortening
2/3 cup evaporated milk, divided
1 (18.25 ounce) package German chocolate cake mix
1 cup chopped peanuts
1 cup semisweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F(175 degrees C). Grease a 9 inch square baking pan.
Mix shortening and cake mix until smooth. Stir in 1/3 cup of the milk and peanuts; mix well. Mixture will be crumbly.
Press half of mixture into baking pan and bake for 8 minutes.
Over low heat, melt caramels and remaining 1/3 cup evaporated milk in the top of a double boiler or in a glass bowl in the microwave. Stir frequently until melted and smooth. Sprinkle chocolate chips over warm dough. Spread the caramel mixture over the chips. Sprinkle the remaining cake mix mixture over the top.
Bake for 18 to 20 minutes in the preheated oven, until the top is golden. Let cool before cutting into bars.
