My daughter is almost 2, and is now finally back to eating alot of different food. Around 18-20 months she went through a phase where she also was super picky. You just have to keep introducing new things and prepare them in a way your daughter will love. My daughter loves cheese (who doesn't?) so if there is a veggie she isn't particularly fond of, I sprinkle a little cheese on it and she'll gobble it down. Also, fresh avacado has always been a favorite of hers. They can be a little fatty, but it's veggie fat and it might be really good for your daughter to try. Pretty soon you could try giving her fresh apples instead of apple sauce--just be sure to chop them up bite-sized and take off most of the peel if it seems too thick for her. Make sure she gets at least 2 good-sized cups of whole milk every day, she needs the fat. If she doesn't like plain milk too much, you could add a little chocolate syrup, but not too much since it's got alot of sugar. My daughter's favorite thing I make her for lunch is this-- I take chopped white meat chicken (either canned, or frozen chicken breast that has been cooked) and green beans and mix it with a tiny sprinkle of real bacon bits (not immitation), and a little shredded cheese on top. I microwave it until it's hot, then let it cool a little. She loves it, and it's so much better for her than chicken nuggets or mac 'n cheese. Try it!!

I agree with your previous answers. here are a few more ideas: if she will eat spaghetti, mix up some baby food in the sauce. some squash or greens or apples and ham. it should be stage 2 and she wont notice. boil your veggies then use that water to boil pasta. the pasta will soak up the vitamins that are left in the water from the veggies. pedia sure is great but expensive. The carnation instant breakfast is cheaper and has lots of vitamins and minerals. try using pink sprinkles on her food. yeah-its sugar but just use a couple of shakes - once they start eating better you just "keep forgetting" to buy more.
Here is another thing that works. You said she likes chicken nuggets-give her one chicken nugget and when she asks for more say "ok-one bite of carrots" she will probably say no at first but thats fine. dont give her anymore nuggets, though (dont do it when she is really really hungry) it make take a few times but she will eventaully start taking some bites. when she does-start asking for 2-3 bites before she gets another pc of chicken nuggets. you can even have an older child demenstrate this in front of her so she sees they ate the carrots so they got the chicken. dont make her set there till she eats it-of she decides she doesnt want it, then fine, but she is done.
V8 fusion juice tastes really good. its 100% juice and its vegtable and fruit. you can make "ice cream" with yogurt and frozen berries. little snack trays and cute little bowls are attractive for them. keep trying and give her vitamins in the meantime.
good luck

My 20 month old daughter is a picky eater, too and was a preemie and is still underweight. Meal time is always so frustrating.
Here is what she will usually eat (besides the things you already mentioned):
mashed potatoes
mac and cheese
pasta of any kind
ice cream
french fries
rice
grilled cheese or any kind of cheese
diced peaches and pears
broccoli
green beans
corn
cooked carrots
she really loves rice!
Good luck!

Try making her, her own pasta. Take her to the grocery store and let her pick out the ingredients (you pick out two or three and she can pick one). I use Knor's alfredo sauce with pasta stars and cut up all beef hot dogs for my son and he loves it because he picked it out. Make a big batch and she can eat it all week. Then the following week do the same thing with different ingredients, in no time she'll be eating different things every week. The key at that age is letting them choose, eating is the one thing they can control in their life. That's why they sometimes will go days without eating!

If your creative enough you can get kids to eat just about anything. Try turkey chees and lettuce sandwitches that are cut into cool shapes. Or make two fryed eggs and use bakon as a mouth. Kids love that kind of stuff so just be creative! Good Luck

try oatmeal in the morning, all fruits, whole wheat toast, whole wheat pasta, Campbell's chunky soups, yogurt, veggies, broc and cheese brown rice, whole wheat waffles or pancakes, salad must kids prefer ranch dressing, sweet potato fries or sweet potatoes cooked any way, raisins, breakfast shakes, pediasure, meatballs, peanut butter on crackers, do not refer to your child as picky, it is very common for children to appear picky at this age, when she is around, tell people what a great eater she is, when you give her new things tell her you made it because she loved it so much last time, if you refer to her as a picky eater, she will become one if you refer to her as a great eater she becomes that too,

Well, my son was very picky up until the last 6 months. I'd try some meat sticks or hot dogs, goldfish crackers, spaghetti O's, or mabey even some olives.
