I'm a big fan of the croque madame. take a couple slices of brioche, brush the insides with dijon butter (just dijon mustard and parsley mixed with unsalted butter) then add your ham (boiled) and swiss cheese to the bread. heat a non-stick pan, add unsalted-butter, and brown it slightly. add the bread, with the ham and cheese facing up, then place it into the oven for a couple minutes, until the bread is golden brown, and the cheese is melted.

While it's in the oven, you'll want to fry 1 egg. just cook it until the bottom is set, and throw it in the oven to set the top of the whites.

take out the sandwich, place the two halves together, take the egg out, and put on top of the sandwich. Then get a little mornay sauce, and pour that over your sandwich, and sprinkle a little fresh chopped parsley over the top. best grilled cheese you'll ever have.

The best grilled cheese I've had is actually called a Rueben.

The Reuben or Reuben sandwich is a grilled or toasted sandwich made with corned beef, sauerkraut, Swiss cheese, and either Russian dressing or Thousand Island dressing. It is typically made with rye bread.

Ingredients 18 slices bread 4 tablespoons butter 9 slices Cheddar cheese Directions 1.Preheat oven to 450 degrees F (230 degrees C). 2.Butter one side of 9 slices of bread, and place butter-side down on a baking sheet. Arrange cheese on each slice of bread. Spread butter on 9 remaining slices of bread, and place them buttered-side up on top of the cheese. 3.Bake in preheated oven for 6 to 8 minutes. Flip the sandwiches, and bake an additional 6 to 8 minutes, or until golden brown. Glorified Grilled Cheese Sandwich Ingredients 1 egg salt and pepper to taste 2 tablespoons butter, divided 2 slices Italian bread 2 teaspoons mayonnaise2 teaspoons Dijon mustard 4 thin slices ham 2 slices Swiss cheese Directions 1.In a shallow dish that will be large enough to dip your sandwich in, whisk the egg with some salt and pepper. Set aside. 2.Melt 1 tablespoon of butter in a skillet over medium-high heat. Spread the mayonnaise and mustard onto one slice of bread. On the other slice, layer the ham and cheese. Place the slices together to enclose the ingredients. 3.Carefully and quickly, dip each side in the beaten egg, and place in the hot buttered skillet. Cook until golden brown on the bottom, then melt the remaining butter in the skillet. Flip the sandwich, and cook until browned on the other side.

8 slices country-style white bread, sliced 1/2-inch thick
12 ounces farmhouse Cheddar, sliced
3 tablespoons unsalted butter
12 slices bacon, cooked to desired doneness
1 green apple, thinly sliced
Dijon mustard

Heat griddle or large skillet over medium-low heat. Alternatively you can use your panini press if you have one.
Assemble sandwich: Generously spread Dijon on 4 slices of bread. Top with slices of Cheddar, 3 pieces of bacon, apple slices and additional Cheddar. Place the remaining bread on top and spread with butter. Place on skillet buttered-side down and butter the remaining side. Cook until cheese is slightly melted and bread is browned. Flip the sandwich and continue to cook until cheese is thoroughly melted and sandwich is golden brown.

Two pieces of Texas Toast
1 Kraft single American cheese.

Butter 1 side of each piece of bread put the cheese in the middle. Place the sandwich in a skillet and brown ...turn over and brown the other side.
Serve with a bowl of tomato soup.
Yummy.

Soft white bread, spread with margerine on one side and a little bit of mayo on the inside, two slices of American cheese (about the only thing it is good for), add some Claussen dill pickle slices (only Claussen, trust me), and the other piece of buttered bread. The order is actually pretty important.

Pan fry over medium until golden brown on both sides and the cheese is all melty, cut diagonally, and serve with tomato soup.

Best grilled cheese sammich evah. ;)

Grilled Swiss with Bacon and Tomato on Rye! I learned it from a diner in New Haven, Ct! It's the best!

Just take a slice of rye, layer on a slice of swiss, some crispy bacon slices, a few slices of fresh tomato, - I also add a few slices of raw onion, but that's just me - another slice of swiss and another slice of rye.
Butter the outside of the rye slices and throw it into a fry pan.
Cover and cook a few minutes, and then flip and re-cover for another few minutes, until both sides of the bread are nicely browned and the cheese and tomato are softened.

Yum...now I want one!

the best I have ever had is a simple and traditional southern grill cheese....heat a pan over medium heat, lightly butter one side of bread and place bread in pan butter side down, top with slice of american or velveeta cheese, lightly butter another slice of bread placing butter side up on top of cheese. Flip, browning on both sides ...enjoy! ...a bit fattening but delicious!

4 slices pepper jack
8 slices bacon, fried
2 tsp, mustard

spread bread with mustard, add cheese, and bacon, pan fry with some butter and a drop of oil, til golden brown and cheese start to melt, cut in half and serve with a salad,

Does a croque madame count? I had an excellent one at Bouchon once. But for home I make mine with two slices of white bread, 2 slices of American, and then hose the outsides with garlic spray and then fry. (And I like to dip it in wasabi mayo.)
