This recipe will help use up some of that sour cream.
Sour Cream Chicken Enchiladas
Ingredients
3 1/2 cups Sour cream
3 5-oz Cans boned chicken, cut up (about 2 cups)
2 4-oz Cans mushroom stems and pieces, drained
1 4-oz Can green chilies, drained
1/3 cup Onion flakes
1 tsp Chili powder
1/2 tsp Salt
1/2 tsp Garlic powder
1/4 tsp Pepper
Salad oil
12 Tortillas
1/3 lb. Cheddar cheese, shredded
Preparation
About 1 hour before serving:
In a 13" x 9" pan, spread 1 cup of sour cream; set aside. In 2-qt. saucepan, with fork, flake chicken; add 1/2 cup sour cream, mushrooms, green chilies, onion flakes, chili powder, salt, garlic powder and pepper. Cook over low heat, stirring occasionally, just until heated through.
Preheat oven to 450 degrees F. In 8-inch skillet over medium-high heat, in about 1/2-inch hot salad oil, fry 1 tortilla a few seconds on each side until softens. (Or warm them in the microwave between two wet paper towels for about 30 seconds.)
Spread about 1/4 cups chicken mixture, along center of the tortilla; fold sides of tortilla over filling and place seam side down, in the sour cream in the pan. Repeat, making 11 more.
Spread enchiladas generously with remaining sour cream, then sprinkle with cheese. Bake 8 minutes or until cheese is melted.

Chocolate Sour Cream Cookies
INGREDIENTS
* 1 cup white sugar
* 1/2 cup butter
* 1 egg
* 2 (1 ounce) squares unsweetened chocolate, melted
* 1/2 cup sour cream
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 cup chopped walnuts
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Blend sugar and butter or margarine until fluffy. Add egg. Add melted chocolate and sour cream. Blend until creamy.
3. Sift baking soda into flour. Slowly add flour to cream mixture. Add nuts.
4. Drop on a greased cookie sheet and bake for 10 minutes. Allow to cool for a couple of minutes before removing from the cookie sheet to a wire rack.

You can make a baked potato casserole. Microwave or bake enough potatoes for everyone you are serving. Make sure you thoroughly wash the skins first. After they are cooked, cube them. In a mixing bowl, mix them with real bacon bits, finely diced green onions, butter, shredded cheese and sour cream. I don't measure so, add ingredients to your taste. Put it in a casserole dish and bake it at 350 for 20 minutes. Delicious! I'm always being asked to make this. You will want to add the sour cream pretty liberally because the baking will make it dry out.

I would get some beautiful flounder fillets and season them really well how you like, lay them out in a buttered pan and pour those containers over them, bake it all till done. Serve with rice.

You can also make some baked goods. Sour cream makes cakes moist & adds a little tang.
