Ok, it's the end of the week and my parents have been working none-stop. I'm bummin' around the house and figured I could give a little back and have a nice dinner for them when they get home.

I want the entree to be chicken. I want it to taste gourmet, the thing it though, we don't usually have those fancy gourmet ingredients. I need a simple recipe for chicken, with everyday ingrdients but with that exquisite high end quality to it. I know it's a stretch so do the best you can.

Please include the time it takes to make, oven temp, etc. Leave nothing out.

Also, if you can't come up with a recipe like that, I could also use suggestions on a dessert, side dish, salad, whatever. Just keep it simple! PPPLLLEEEAAASSSEEE!!!!!

Lemon And Herb Roasted Chicken With Baby Potatoes


1 (4 to 5 pound) free-range chicken
Kosher salt and freshly ground black pepper
1 lemon, halved
1 head garlic, halved
1/4 bunch each fresh rosemary, thyme, and parsley
1/4 cup olive oil
11/2 pounds red new potatoes


Preheat the oven to 400 degrees F.
Rinse the chicken with cool water, inside and out, then pat it dry with paper towels. Season the cavity with salt and pepper, and then stuff the lemon, garlic, and herbs inside. Place the chicken, breast-side up, in a roasting pan. Tie the legs of the chicken together with kitchen twine to help hold its shape. Toss the potatoes around the chicken. Season the whole thing with a fair amount of salt and pepper and drizzle with olive oil. Roast the chicken and potatoes for 1 to 1 1/2 hours. Don't forget to baste the chicken with the drippings and rotate the pan every 20 minutes or so to insure a golden crispy skin. The chicken is done when an instant-read thermometer says 165 degrees F when inserted into the thickest part of the thigh (the legs of the chicken should wiggle easily from the sockets too.) Remove the chicken to a platter and let stand for 10 minutes, so the juices settle back into the meat before carving. Serve with the roasted potatoes on the side.

I don't know how old you are, but perhaps there is some wine on hand.

Take the chicken and dust it lightly with flour, salt and pepper. Sautee this in a frying pan until it is golden brown. Take the chicken out of the pan and add mushrooms and/or onions to it. Make sure you season them with salt and pepper. Sautee them until they are slightly soft. Take the pan off of the fire! This is important if you don't want the pan to flare up. Then add a cup of wine,scrape the bottom of the pan so all the bits from the bottom come off they will make your sauce more delicious. Let this cook for about 1 minute. Then add 1 cup of water or chicken stock. Add the chicken back to the pan and finish cooking on a low simmer. For boneless chicken it should take about 10 minutes for bone in chicken about 20 minutes. Serve it with rice or egg noodles. Sides are really easy. Just steam fresh veggies. If you want to get fancy make a flavored butter sauce to go on top. Put a stick of butter in the mic with garlic, lemon zest, lavender, or whatever and let the butter melt. Let the butter reharden and whip it up with a fork. The butter should get really light in color and texture. The easiest desert ever is putting a can of sweetened condensed milk in boiling water for about an hour. When you open the can you have a delicious caramel. You can then serve it with apple slices.

BLASTED CHICKEN

preheat oven to 425

spray 9x13 pan with pam or some kind of no-stick spray

wash and pat dry whole chicken. season with your favorite seasonings; I use McCormicks Montreal Chicken

place chicken breast side down in the middle of the pan. Put inthe oven and close the door.

Bake for 1 hour and 15 minutes. DO NOT OPEN THE DOOR!! This is very important.

Let stand for 10 minutes, then slice and serve. The chicken will be beautiful golden brown on the outside, juicy and tender on the inside.

Mashed potatoes and green beans for sides .... maybe brownies for dessert?

SIMPLE DESSERT!!! if they love cheesecake!!

1 small tub of cool-whip
1 pkg cream cheese
1/2-1 cup of sugar ( depends on how sweet you like it )
1-2 lemons ( to squeeze )

in a bowl combine the cool-whip, cheese, and lemon juice. Mix well. Will be a little lumpy its OK!! add the sugar and mix well again. cover and chill in ice box for at least 20 mins. Can make this before dinner and have it chilling the whole time!!!

Serve in a bowl with graham cracker, vanilla wafers, fruit anything simple! Dip and enjoy!!!!!

This stuff is wonderful! and EASY you wont believe the taste!! plus the ingredients wont break the bank! ;)

Grilled Raspberry Chicken
• 6 boneless, skinless chicken breasts
• 1/2 cup frozen raspberries, thawed
• 1 cup raspberry vinaigrette
• 1/4 cup raspberry vodka (optional)
• 1/4 cup finely chopped mint leaves (optional)
• Fresh mint sprigs, for garnish (optional)
• Fresh raspberries, for garnish (optional)

Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.

Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

Assuming it's chicken breasts, how about a chicken saltimbocca? That's if you have ham and Swiss in the house. If there's any pesto in the house, throw that in too.

Go to Kraft foods.com they will have a huge selection of nice looking and good tasting dishes using ingredients you have on hand. Their recipes are pretty easy to prepare and quick. Good Luck, what a nice thing to do! :o)
