Don't boil the eggs.... The term "hard boiled" eggs is a misnomer. It should be "hard cooked" eggs since you shouldn't really boil the eggs. Boiling will cause the eggs to be rubbery.

Let the eggs and water come to a full boil, turn off the heat and let sit 20 minutes with the lid on.

Have a bath of cold ice water ready so you can take the eggs out of the hot water and place them in the ice water. This will help prevent the green ring that some people get around the egg yolk so you'll have nice yellow yolks.

First of all, let them sit in the fridge for about a week. This will make them easier to peel when they're done. Second, put them in a pot and fill with enough water to cover all the eggs. Then start the stove and set a timer for 20 minutes. Whalla! Great hard boiled eggs!

use eggs 2-3 weeks old, for easiest peeling; if you know you will need them for a certain occasion or dish in advance, buy some and store for 2-3 weeks.

add a splash of vinegar to the water to aid peeling

if you are 'boiling' them, you are putting them under too much heat. bring water to a boil, then immediately turn off the heat, letting pot sit covered for 45-60 min. you will have perfect eggs.

Place eggs in a pot in a single layer. Cover with cold water. Bring to a boil and time for 15 minutes. Drain and cover with cold water. And if you want to peel them, shake the pan when re-covering them with water. Let them sit for 15 minutes and they'll peel easily. And try to use older eggs. The fresh ones do not peel well. As long as they don't float, they're OK.
