Some people say Heaven and Earth. I've heard it said both ways. Maybe it's because the heavens is so vast, never ending. Think about it, it has to be a pretty big place to hold all believers.

"The heavens" doesn't refer to heaven where the saved will spend eternity. It refers to the sky, the stars and planets, whatever is "out there" as viewed from the earth. Even in ancient times, before any of the Bible was written, this was referred to as "the heavens" (not in English of course, since English didn't exist then either).

Many different religious texts refer to the levels of Heaven or the different dimensions. The higher ones being closer to God that souls must work their way up to.

I am not sure of any other beliefs systems other than Islam. We believe that heaven is divided into seven levels, each one specific to a certain characteristic. The third heaven is where beauty will be manifest, for example.

Showing the vastness of the heavens. There is this huge universe with many different planets, moons, etc. that we have not even discovered or thought about.

plural does not always me more than one, like english tries to teach us. good example is how the queen of England talks. " Yes, we will have some tea ". She said "we" meaning more than one, but it was just her.

Same can be applied to Elohim. Can mean God, god like, etc. Can be singular or plural even though it still means 1.

English is some of the hardest language around when you compare it to others. ( I have lately study'n my native Indian tongue and some Hebrew, Arabic)

So that when we're excited about something we can exclaim "good heavens!" instead of "good heaven!". The latter just doesn't sound right.
