A friend of my parents and total wine guru, would bring water crackers, an assortment of simple cheeses, and deli meats. Nothing fancy at all. One time he brought some pimento loaf and it went really well with the cabernet he brought. His theory (from the man who owns 3000+ bottles and cellars them, some from the 1950's) is that you drink wine to enjoy company and maybe have a bite to eat on the side, and you eat whatever you like.

I trust the guy, he taught me a lot about appreciating young and old wines.

I like bruschetta with red wine. Get a fresh French baguette and slice it in 1 inch thick slices. Lightly toast the slices in a 400 degree oven. Rub the toasted slices with a garlic clove, then top with chopped Roma tomatoes, slivered-up basil leaves and shredded asiago cheese. Drizzle with a little balsamic vinegar and olive oil. Yummy!

That would be cheese and crackers. Try a nice Asiago Cheese spread. One with pecans if he likes nuts and has no allergys would be great.

I would go with a light cracker, a bit of smoked salmon, and some creme cheese.

Cubes of cheese, preferably something slightly aged, so it has a bit of a "bite" to it - to compliment the wine.

I love to drink red wine with nice chocolates(ie. Godiva). I'm not sure why but it def. pleases my palate.
