Liver suffers from a bit of bad publicity in my opinion. It's one of those "good news-bad news" types of foods. For example, liver -- in case you didn't know -- is a rich source of iron. But it is also very high in vitamin A. Having iron in your diet is a good thing. But having too much vitamin A is bad. Why? According to www.eatwell.gov.uk, the body stores any vitamin A it doesn't use and so levels can build up over many years and be harmful. Most nutritionists will tell you that if you eat liver once a week you should hold off from taking any taking supplements containing vitamin A or fish liver oils (which are high in vitamin A). For the sake of argument and your overall health; more than 1.5mg of vitamin A per day from food or supplements is considered too much.

There are plenty of other iron rich foods to choose from, too, though.....

lean red meats, including beef, pork, lamb
seafood, such as oysters, clams, tuna, salmon, and shrimp, etc.
beans, including kidney, lima, navy, black, pinto, soy beans, and lentils
iron fortified whole grains, including cereals, breads, rice, and pasta
greens, including collard greens, kale, mustard greens, spinach, and turnip greens
tofu
vegetables, including broccoli, swiss chard, asparagus, parsley, watercress, brussel sprouts
chicken and turkey
blackstrap molasses
nuts
egg yolks
dried fruits, such as raisins, prunes, dates and apricots

No matter what people say or try to tell you you should never eat liver for the exact reasons you stated. Your body has enough toxins in it theres is no need to add more. remember what every went through that liver is still in it and will go into you.

Liver is a filter organ?
I think you are mistaken it for kidneys?

Liver does A LOT and I mean A LOT of stuff crucial to the body. (NOT going to go into a lecture here and now but it does not really "filter" - as you claimed.

It contains all the toxins that the animal was not able to get out of the body. So, don't eat it unless you feel you aren't getting enough toxins in your area.

We shouldn't!! It's nasty looking, nasty smelling and nasty tasting!! Any nutritional value that foul stuff has is far outweighed by the gross-out factor!
