I just used Excel and word for wedding planning stuff. My husband found a simple template online for me, but I expanded it to include just about everything that was needed for a wedding.
I also found it was easier having the guest list in Excel because that translated easily to Word for mail merge documents to do the envelopes for shower and wedding invites as well as thank you notes.

I bought...what was it smart wedding at www.smartwedding.com I think it was like $35 online and you get a 30 day trial I REALLY think it has been helpful, you can print your envelopes or sticky address labels, organize your seating, guest list, RSVP's pretty much everything, if anything you can check it out for 30 days for free before buying it.

Kind of random, but if you want to do reception layouts you can use Bassett Furnitures' online room planner. It is meant for houses, but you can do tables, chairs, plants, etc on it. Really cool.

What do you pick application for? this may well be a marriage, no longer a plot for international domination. I used a folder to maintain papers and notes in one place. I used an Excel spreadsheet for my customer record (which I extensively utilized to envision off thank you notes after the marriage). and that i created a "wedding ceremony" folder in my e mail account.
