Use your favorite 'from scratch' cake recipe and pour it into cupcake holders.

If you don't have a favorite, here's a standard cake from scratch that my mom used all the time.

Cream together:
3/4 Cup Butter
1 1/2 Cup plus 2 Tablespoon sugar

Add 1 @ a time and beat well:
4 egg yolks

Sift together and add alternating with below:
1/2 teaspoons Salt
2 3/4 Cup Flour
3 teaspoons Baking Powder

Add alternating with above:
1 1/4 C Milk
2 teaspoons of your favorite flavoring (mom used vanilla, butter or pineapple)

Stir or fold in:
4 beaten egg whites

Bake at 375 degrees for 30-45 minutes. For cupcakes check with a toothpick at about 20 minutes to see if they are done. If the toothpick comes out clean, they are finished.

For frosting try this:

Cream together:
2-4 Tablespoons of Crisco, or more if you want more frosting.
Work in 1-2 Cups of Powdered sugar (or until it tastes as sweet as you like it.)
Add just a little milk or water for ease of mixing and spreading. (Not more than a couple of tablespoons. Be careful not to get too much.)
Flavoring (optional--you can add chocolate, chocolate chips, vanilla, etc.)
Food color--also optional.

3 c. flour
2 1/4 c. sugar
3 tsp. baking powder
6 eggs
1/2 lb. butter
5 tbsp. shortening
2 tsp. vanilla
3/4 c. milk

Mix all in a bowl and stir for 25 minutes. Bake in a greased and floured tube pan in a cold oven 350 degrees for 1 hour and 10 minutes exactly.

Only use a muffin pan with cupcake liners. Fill the cupcake liners 1/2 full. Another fun cupcake especially for children is to use ice cream cones. Fill half full and sit on a cookie sheet to bake.

ICING:

1 lb. powdered sugar
1 stick melted butter
1-2 tsp. vanilla
Just enough Milk to make spreadable

Mix all ingredients together. Frost cool cake.

Don't you mean....How do i make Cupcakes FROM scratch?

Get a basic cake recipe - make the batter and put the batter into patty cake tin. Baked at the same temperature as a normal cake recipe but at a much shorter time.

Cheers
