Organic and non organic have nothing to do with shelf life.
Both are paturized which is cooked a little, which should extend the shelf life in both. The cows that produce non organic may have been given antibiotics or hormones, which also would not affect the shelf life.
Organic milk should be local, which may be why it has longer shelf life.

Because organic milk doesn't come directly from cows? Well, it must have more preservatives and i'm guessing by the time the milk (reg milk) comes into the store from the farms and stuff, its been out of the cow for some time so, it has less days till it goes bad. As for organic milk, well it doesn't go through as long of a process as regular milk does.

Most organic milk is Ultra-pasteurized. From- http://www.horizonorganic.com/site/faq/products_org_milk_process.html

Ultra-pasteurization is the process of heating the milk at an even higher temperature for a shorter period of time than that used for pasteurization. Pasteurization allows the milk to have an extended shelf life without the use of preservatives
