Add some barbecue sauce to shredded up pork for barbecued pork sandwiches or shred up the pork for burritos or chimichangas.

Hello:

I was thinking of two dishes that you could make with your pork roast.

1. You could make some mashed potatoes and gravy and have your pork roast warmed up with mashed potatoes and gravy on the side. You could also have a veggie like sweet corn on the side if you prefer and a salad and a dessert.

2.I was also thinking that you could make barbecued pork sandwiches. You could put the barbecued pork on top of a hamburger bun kind of like a manwich except it's barbecued pork. You could have coleslaw,macaroni salad,baked beans,or potato salad on the side,potato chips and a dessert if desired.

Leftover Roast Pork Casserole

Ingredients:
2 cups leftover roast pork, cubed
1/2 cup au jus sauce
1 (10 1/2 ounce) can cream of broccoli soup
1 cup cooked rice
1/4 cup milk
1 cup shredded cheddar cheese, divided
2 tablespoons butter
1/2 cup seasoned bread crumb

Steps:
1. In a sprayed or buttered casserole dish mix the roast pork, au jus, soup, cooked rice, 1/2 cup of shredded cheese and milk.

2. melt the butter. Add the bread crumbs to the butter and mix together.

3. Spoon the topping over the roast pork mixture and add 1/2 cup of cheese over the topping.

4. Bake in 350 degree oven for 25-30 minutes.

You could make Cuban Sandwhiches

You will need:

* Loaf of French Bread
* Pork Roast in Slices
* Sliced Ham
* Swiss Cheese
* Sliced Pickles
* Mustard

Slice your french bread down the center, on one side butter lightly, on the other add the mustard. Layer the Pork Roast, Ham and Cheese, then top with a few pickles.

If you have a indoor grill such as a George Foreman grill heat it up other wise you can use a regular skillet. Allow it to preheat over med-high heat. While that preheats, close the top of the French bread and cut into size of your choice. Take the palm of you hand and flatten before placing on the grill or skillet. To make it reall authentic, you need to place something with some weight on top of the sandwhich to press it down while it toasts, when done to your liking, flip the sandwhich over and toast the other side. (If your using a grill no need to flip just toast to your taste.

Serve hot with your favorite side!!

Slice into thin strips and saute' it lightly in butter or olive oil. Serve it over salad. Also could pour bbq sauce over strips and broil about 7 minutes. How about a nice PLT sandwich?

Make homemade bbq sandwiches!! Take & pull or chop meat - whichever way you prefer, then place in crockpot. Add enough bbq sauce to cover, then heat on low for at least an hour. Serve on toasted onion buns with coleslaw & baked beans.....Yummy!!

Quick and Easy Sweet and Sour Pork is always delicious.

QUICK 'N EASY SWEET AND SOUR PORK

3/4 lb. left over pork roast
1 sm. green pepper, cut in strips
1 lg. tomato cut in wedges
3/4 c. chunk pineapple
1 sm. can mandarin oranges
Cooked rice to serve 4 to 6.

SAUCE:

1/4 c. water
1/4 c. catsup
1/4 c. vinegar
6 tbsp. sugar
2 tsp. Worcestershire sauce
Dash of Tabasco
1 tsp. soy sauce
1 tbsp. cornstarch in 2 tbsp. water

Trim excess fat from left-over pork, and cut into 1" chunks. Place in a large fry pan.

Prepare sauce by combining all ingredients, except cornstarch in water, in a medium saucepan. Bring to a boil and simmer 1 minute. Slowly add cornstarch and water mixture and stir and cook until thickened. Add green pepper to sauce and cook 1 minute.

Transfer sauce mixture to fry pan with meat. Add tomato, pineapple and mandarin oranges and heat through. Serve over rice

Barbecue Roast on Cornbread Pancakes

1 lb Left-over Pork, shredded
1 c. your favorite barbecue sauce
3 c. shredded lettuce (Optional)

CORN BREAD PANCAKES
1 c. cornmeal (white or yellow)
1 c. flour
1/4 c. sugar
3 tsp. baking powder
1 tsp. salt
1/4 c. soft shortening
1 c. milk
2 eggs, beaten

Shred roast with knife or food processor and mix with barbecue sauce. Keep warm until ready to serve.

Corn Bread Pancakes: Combine cornmeal, flour, sugar, baking power and salt in bowl. Cut in shortening. Mix eggs and milk together and add dry ingredients until batter is smooth. Pour about 3 tablespoons on hot greased griddle for each cake. Bake until bubbles break over surface, turn and brown other side.

Serve shredded pork between pancakes with lettuce and additional barbecue sauce.

2) cut into tiny pieces and add to white rice, 1 scrambled egg, peas, soy sauce & sesame oil

You could make it in a stew or soup. Also mixing it with barbecue sauce is yummy. Or try it in taco, wrap, casserole.
