I say Spanish especially for American because Spanish is seen and heard daily in many parts of the US, especially in California, Arizona, Texas, Florida and other Metro areas. Take Wal*Mart and Lowes for instance, their signage in many stores are in English and Spanish. Many products have bilingual labels and directions (Spanish and English). There are many Spanish language radio, television, cable and satellite channels and programs as well as newspaper and magazines. 10% of the poeple in the US speak Spanish. All these environmental factors help a student learn Spanish. Not to mention Mexico and other neighbors in Latin America and the Caribbean also speak Spanish. So if you want to take a short vacation or viaje without travelling across the Atlantic or the Pacific to a foreign country or island nearby - Spanish comes in handy and can be easily practiced.

I have heard that french is easier for english speaker to learn than Spanish. I speak Spanish fluently. It is a difficult language to learn to speak well. Most people who tell you it's easy do not speak it very well.

I would say Esperanto.
It's not really latin-based, but it does use the latin alphabet.

It's easy enough that some learn it within just a few weeks.

some people say Spanish, but others say Spanish is no easier than French. I don't know.

The little bit of Italian I've picked up came fairly easily to me, much easier than French, and people say spanish and Italian are similar.

so... I don't know. maybe they're all equally hard.
