How do you know the person who said they were over you arent?

Ok, theres this dude and to make it simple. He liked me for a long time, even after many refusals, then one night i admitted my feeling and he claimed he had no feeling for me and he like another girl. But i can tell sometimes the way he looks at me or glances over he may be lying how do i know?
