Make your own version of Uno's Pizza Skins.
Using the pre-made dough you can find in any grocery store, bake the pizza crust for a few minutes until it's set but not crispy. Then layer the slightly heated mashed potatoes (seasoned with salt and pepper) and top with cheddar cheese and bacon, or whatever other delicious topping you like!

OK, this is my very special recipe for leftover mashed potatoes....
Mix into them some chili and garlic and chicken stock ( only a little of each)
Roll into balls
Crumb the balls by dipping into flour, egg mix, then breadcrumbs.
Lightly fry in a hot pan with olive oil.
Careful to turn/roll them in the pan whilst frying.
My hubby LOVES these!!!!
You can also put chopped ham and herbs into the mix to make them really interesting!

For two cups leftover Mashed Taters.
Chop a small onion, 2 eggs, some parsley, shredded cheese, little self rising flour or bisquik and Tabasco sauce ( I prefer Crystal hot sauce) Mix well. Heat olive oil in skillet and spoon in Potato mixture and fry on each side till brown. Remove and drain on Paper towel or whatever.
Also you can canned salmon or tuna for great Croquettes

I've made a soup with mashed potatoes before. And I like mixing a little milk or cream in and spreading them in a dish and topping with cheese and baking them.

1) Use them to thicken a soup.
2) Make a Russian-style potato salad with chopped pickles, chopped hard-boiled eggs, and diced red bell pepper.
3) Use them instead of sliced potatoes to make a moussaka.
4) Add cooked, flaked (or canned) salmon, chives, and sour cream. Roll the mixture into balls and coat with parsley beadcrumbs. Shallow-fry until crisp on the outside. Ta DA! Salmon croquettes.

If you have enough potatoes to cover the bottom of a casserole,then do this.Cover the casserole.Then brown you some meat(or use leftovers)Then add 1 can of cream of mushroom soup,garlic powder,chopped onion to the meat.Mix well.Then spread over the potatoes and sprinkle with cheese.bake til golden brown and bubbly.You can add a can of mixed vegetables to stretch further..hope this helps.

Add some milk/cream, lots of pepper, heat as for potato soup. Add some shredded cheddar. Heat on low until cheese melts. Serve with crusty french bread. Comfort food!!!
