Hey dude, I'm not from the States so pardon my ignorance if I get it wrong. If you're looking for downhill biking, but in a resort type environment I believe that Plattekill has a good network.
Try looking at the Mountainbike Action website, they usually have some good links and may very well have reviewed some trails in New York.

Take the lift to the top the the Empire State. Go to the fire exit and ride the stairs down :).
