spicy hot, salty and slightly sour, but not as sour as sauerkraut. The chile peppers hide that taste.

Since kimchi is fermented, sometimes it feels like there's some carbonation in the vegetable where it's feels slightly tingly foamy on the tongue.

It's good once you acquire the taste.

The other answers left out the garlic. Good kimchi has a lot of garlic and if you eat a lot, you can smell it oozing out of your pores.
It is good stuff, especially with meat and rice dishes!
And, even though cabbage is used for traditional kimchi, you can use other veggies as well to make it.

Like strongly seasoned cole slaw. It has a bit of bite from peppers, and is sort of pickled. It is a bit of an acquired taste, and to me is another alternative a side of salad

it's basically just really spicy cabbage/lettuce. it's pretty good stuff if you can handle it
