You can use what ever fish you like.
The local restaurant here claims their fish tacos are made from snapper, but you can use any type of white fish fillet.
Snapper, Tilapia, Cod, Halibut, Catfish... etc.
If you like salmon, go for salmon.

I would suggest Hoki, but it is likely you have never heard of it, or it is known by another name.
I suggest you see your fishmonger for a firm white fish, which will flake into chunks when cooked.

I would recommend Tilapia, its what our local mexican restaurant uses in theirs and its yummy! :)
