Raisins have a deep purple color, yet grapes come in red or green. So are raisins only made from red grapes, which gives them the color? Also, even red grapes have a light center, yet raisins are dark colored all the way through. Why is this?

I have seen raisins made from white grapes....they weren't as good in my opinion.

As for the coloring I want to say it's like what happens when a banana gets over ripe (turns dark), but the white grape raisins were not dark.....not sure why.

I believe so. There are white raisins made from white grapes, just like white grape juice. Don't know why they are dark all the way through.Maybe the pigment from the skin gets deepened through the "raisining" process and seeps into the 'meat'.

They do make golden raisins, which are made from green grapes. The lack of light colored centers in regular raisins is probably due to the fact that that is where most of the moisture is held, and when you dry it, you're removing it.

i thought raisins were made just from any grape. They can be green because when you have a bag of grapes they go brown if you keep them a long time. so i presume it is any grape.

There are "white" raisins, but they are actually a pale green. There are also golden raisins.
Raisins are merely grapes allowed to fully ripen on the vine.

You can get white rasins. They really look more gold than white.
