I want to get her something that will be very useful, any ideas??

How about a universal transformer (AC Adapter) if she does not already have one? She will need one to convert to the 220 vs out 110 volts here in the states. Make sure you get the one rated for 1600 watts for stuff like like curling irons. You can get them at Best Buy for about $28.00.
The ones at Best Buy also have the adapters for several counties, incuding Korea (2 round plugs instead of our two flat ones).
Otherwise, get her a bunch of fashion magazines such as People or GQ magazine. The teens love them over there.
Oh...I almost forgot. Get her tickets to "Nanta" in Seoul. It is a musical/comedy show that is top rated, and hilarious! Tickets cost about 45-50,000 won (about $48.00 U.S.) This was on of the highlights when I went to Korea last week. I can't remember the theater name, but you could Yahoo/Google it to get more info.

Well, I am from the US and I am in Korea for a year total. I really miss the food. I know you cant really give food for a going away gift... but something to remind her of home. Or something that she wont be able to get in Korea... like a favorite lotion or something small like that. Maybe a gift bag with a few things in it. Her favorite snack, her favorite lotion, and one of those english-korean dictionaries that also have common phrases and things.

I would second the magazines. That's something my wife is always wishing she had brought with from home. You can find back issues in the big bookstores like Bandi and Luni's, but they are REALLY expensive (think $40 for three magazines).
