If we compare the same cheese (say, Cheddar or Edam) from the same dairy company, would the sliced version be more processed and contain more preservatives than the equivalent "block" version?

No, it shouldn't be. It's just sliced.

BUT, beware of the small print. If the package says, "process cheese food", then it's not the real thing. This is common in the "individually wrapped" kind.

Get a block of cheddar and a slice of cheddar put them on toast and put them under the grill at the top of the oven. You will see the result will make you wonder if the slice of cheese is cheese at all.
We once had a type called "melter's" which should help you answer your own question.

When you compare the same cheese from the same company, it IS the same product, just offered in different form for the consumer's convenience. They are just "chips" off the same block.

Yes the texture is different and the taste is different so I would say there is something in the cheese that is not the same as a kilo block.~~
